Preparing the Tzatziki
- Grate the cucumber and squeeze out excess water.
- In a bowl, mix Greek yogurt, cucumber, minced garlic, dill, lemon juice, salt, and pepper.
- Stir well, taste, and adjust seasoning before refrigerating.
Making the Meatballs
- In a large bowl, combine ground chicken, egg, almond flour or breadcrumbs, garlic, lemon zest, lemon juice, oregano, salt, pepper, and any additional herbs or feta.
- Gently mix with a fork or your hands, being careful not to overmix.
- Roll into meatballs about 1 to 1.5 inches wide.
Cooking the Meatballs
- To bake, preheat oven to 400°F and arrange meatballs on a lined sheet pan. Bake for 15 to 18 minutes until cooked through.
- To pan cook, heat a little olive oil in a skillet over medium heat and cook the meatballs in batches, turning gently, until browned and cooked through, typically around 10 to 12 minutes.
Serving
- Serve the meatballs hot with a generous spoonful of tzatziki.
Notes
Chill the meatball mixture if it feels sticky for easier shaping. Store meatballs and tzatziki separately for meal prep. Tzatziki is great on other dishes too.
