For the Beef Rolls
  • 1 lb Thin beef slices (top round, sirloin, or flank steak) Look for beef that is already sliced thin.
  • 1/2 cup Dried cranberries Sweetened ones work best; soak if too dry.
  • 1/2 cup Walnuts Chopped small and toasted for better flavor.
  • 1 tbsp Fresh ginger Grated; use a pinch of ground ginger if fresh is unavailable.
  • 2 cloves Garlic Minced.
  • 2 tbsp Soy sauce Low sodium is fine.
  • 1 tbsp Honey or brown sugar To balance flavors.
  • 1 tsp Black pepper To taste.
  • 1 tbsp Oil or butter For cooking.
  • optional Crispy coating (flour or breadcrumbs) For extra crispiness.

Method
 

Preparation
  1. Lay the beef flat on a cutting board. Pound to even thickness if needed.
  2. Season both sides with salt and pepper.
  3. Mix filling: combine chopped cranberries, walnuts, grated ginger, minced garlic, soy sauce, and honey in a bowl. Add oil if it looks dry.
  4. Place a modest amount of filling near one end of each beef slice and roll tightly.
  5. Secure with toothpicks or kitchen string if necessary.
Cooking
  1. Sear the rolls seam side down in a hot pan with oil for a couple of minutes until browned.
  2. Finish cooking by lowering the heat and covering, or transfer to an oven at 375 F for 8-12 minutes based on thickness.
  3. Let rest for 5 minutes before slicing to let the juices settle.
  4. Optional: add a splash of broth to the pan after searing for a quick sauce.

Notes

Perfect for making ahead; store rolled in the fridge and sear just before serving. Adjust the ginger to taste for a milder flavor.
